A delicious crispy pork belly recipe that involves marinating pork with a blend of seasonings and vinegar, baking, and broiling for a perfect crackling skin. It requires a pork belly weighing 2.5-3 lb, along with a marinade and vinegar mixture for preparation.
Poke a bunch of holes onto the skin side of pork belly.
On the meat side of your pork belly, cut slits into it, about 1.5 - 2 inches apart and 1/2 cm deep.
Coat the meat side of your pork belly with the marinade, ensuring to get in between the slits and on the sides.
On the skin side, wipe off any marinade and liquids, then coat it with the vinegar mixture.
Lay the pork belly on a piece of foil (marinade side down) and form a boat around it with the foil. Refrigerate uncovered for at least 3 hours.
After 3+ hours, place the pork belly onto an oven safe dish lined with foil — skin side down. Bake at 400°F for 20 minutes on the middle rack.
After 20 minutes, flip the pork belly so the skin side is up, poke holes all over the skin, pat dry any oil/grease, and apply a layer of vinegar mixture on the skin. Bake for 20 minutes (total bake time now: 40 mins).
After 40 minutes, apply another layer of vinegar mixture on the skin and bake for another 20 minutes.
After a total of 60 minutes baking, switch to broil and broil for 5 minutes, watching closely to prevent burning. Cover any burnt parts with foil. Allow to cool before cutting along the incisions.
