BBQ Chicken with Garlic Butter Corn
15 mins prepServes 4
A delicious BBQ chicken dish served with garlic butter corn and potatoes. The chicken is seasoned with a flavorful rub and baked until done, then smothered in BBQ sauce and broiled for a crispy finish. The corn is charred and cooked in garlic butter for a flavorful side.
1: Preheat your oven to 375°F.
2: Mix brown sugar, salt, garlic powder, black pepper, paprika, ground mustard, and cayenne to make the rub and set aside.
3: Cover an oven-safe dish with foil and lightly grease it.
4: Pat dry your chicken and cut slits into it.
5: Cover the chicken with the rub, patting it in instead of rubbing.
6: Cover the top with foil and bake at 375°F for 50-60 minutes, checking for doneness.
7: Once the chicken is done baking, discard the released liquids.
8: Smother the chicken with BBQ sauce.
9: Use the broil function and place the chicken back into the oven, broiling on high for 5-10 minutes while monitoring to prevent burning.
10: For the corn, cook the cobs in a skillet (no oil) until slightly charred.
11: Add a splash of water and cook on medium heat, turning to soak all sides.
12: Once the water evaporates, add butter and let it melt three-quarters of the way before adding minced garlic.
13: Turn off the heat as the garlic may burn quickly.
14: Top with dried parsley flakes or fresh if preferred.
