A comforting and flavorful Beef Pho recipe for a small family of 4 or 5, featuring a rich broth made from beef bones and spices, accompanied by fresh toppings and garnishes.
Thinly slice ginger and peel onion. Place pho spices in a spice bag.
Place all ingredients into an instant pot: beef bones, beef shank/brisket, onion, ginger slices, pho spice, rock sugar, salt, and water. Pressure cook for 45 minutes.
After the broth is done cooking, quickly release the pressure, remove and discard the spice bag, beef bones, and ginger slices. Set beef shank aside to cool before thinly slicing.
Pour the broth through a fine strainer.
Optional: Remove the fat from the broth using a fat separator or let it cool overnight and scoop out the hardened fat.
Bring the broth back to the stove and season to preference with fish sauce and chicken bouillon.
Quickly dunk pho noodles in boiling water for 15-30 seconds, then assemble the bowl with your preferred toppings.
