A hearty braised chuck roast recipe featuring tender beef pieces cooked with onions, carrots, celery, garlic, and rich red wine. This dish is perfect for a comforting meal and pairs wonderfully with mashed potatoes.
Cut Chuck roast into large chunks and generously season with salt and black pepper. Sear in some oil for 5 minutes, flipping every minute, and set aside.
In the same pot, cook onions, celery, carrots, and garlic for about 5 minutes.
Add tomato paste and cook for an additional 2 minutes.
Pour in red wine and cook until slightly reduced.
Add beef broth, thyme, and bay leaves. Combine well and turn off heat.
Return the chuck roast back into the pot and bake at 360°F for 2 to 2.5 hours.
After baking, remove the chuck roast and pour the remaining liquid through a strainer to discard solids and reserve the liquid.
Bring the liquid to a simmer and allow it to reduce.
Serve the beef over mashed potatoes and drizzle with the sauce.
