Fried salmon in tomato sauce, a dish that blends salmon with the freshness of tomatoes and aromatics. Even those who aren't fans of tomatoes may enjoy this dish! It's easy to make and is garnished with cilantro and scallions for added flavor.
Season and coat your salmon with eggs and flour (optional). Set aside. Combine ingredients for the thickening agent and set aside.
In a large pot, cook garlic and shallot until fragrant. Add in onions and cook for 2-3 minutes.
On low heat, add tomatoes and allow to cook/simmer while stirring occasionally.
Once some liquids from the tomatoes are released, add fish sauce, mushroom seasoning, chicken bouillon, and sugar. Simmer on low heat.
Pan fry salmon on medium-low heat for about 2 minutes on each flat side and 1 minute on the edges. Do not cook the salmon all the way through.
Once the salmon is pan fried, combine the thickening agent into the tomato sauce and pour it evenly over the salmon. Cover and simmer on medium-low heat until the salmon is cooked through.
Serve with rice and garnish with cilantro and scallions.
