Instructions

1: In a skillet, heat up 5 TBSP fish sauce and 4 TBSP sugar. Swirl your skillet around until it starts to bubble.

2: Once bubbling, add 2 lb catfish steaks. Flip your catfish 1 time and then baste periodically for 15-20 minutes.

3: (Optional) In a separate skillet, heat up 1 TBSP oil and 1 TBSP brown sugar. Cook until the sugar has blackened, stirring continuously on medium low heat.

4: Once blackened, turn off heat and add 1/4 cup water.

5: Drizzle this caramel mixture over the catfish, simmer and baste for 2-3 minutes.

6: After 2-3 minutes, add 6 oz coco rico or water and continue to simmer for 4-5 minutes.

7: Turn off heat, garnish with scallion and Thai chili.

8: (If you don’t want the caramel color) Add 6 oz coco rico and continue to simmer and baste for 5-7 minutes.

9: Turn off heat, garnish with scallion and Thai chili.
