This quick and affordable chicken broth recipe utilizes a rotisserie chicken and aromatics to create a flavorful base. With a blend of spices and a cooking time of just 30 minutes, this recipe yields approximately 6 servings, perfect for soups or ramen.
Shred the meat off your rotisserie chicken so all that remains is the carcass and anything else you don’t like to eat (like the skin and cartilage). Reserve the meat and set aside the carcass.
Char your onions and ginger in the air fryer at 400 degrees F for 20 mins flipping halfway through, or do it on an open fire or oven until the outer layer of the ginger is black/burnt and blistering juices. Set aside.
Toast your spices (star anise, cinnamon stick, cardamom pod, cloves, fennel seeds, coriander seeds) on medium heat for about 2 minutes or until fragrant, swirling to avoid burning. Place spices in a spice bag or leave them in the pot.
Toss all your ingredients into your instant pot: chicken carcass, charred onions and ginger, spices, 3 qt water, 5 TBSP fish sauce, 1 tsp salt, 2.5 oz rock sugar, 2 TBSP chicken bouillon.
Pressure cook on high for 30 minutes.
After 30 mins, discard everything inside and strain the broth through a fine strainer. Adjust the broth as needed, assemble your bowl and enjoy.
Serve with a ginger fish sauce dip.
