A delightful Chicken Parmesan recipe featuring breaded chicken cutlets, homemade tomato sauce, and topped with mozzarella cheese and fresh herbs. This dish is served with spaghetti and can be adapted to personal taste with flexible ingredient measurements.
Heat up some oil. Once hot, saute garlic and onion until onions are translucent.
Add diced Roma tomatoes and cook for 5 minutes.
Add 2 cans of crushed tomatoes and 2 TBSP sugar. Bring to boil then reduce heat and simmer for 20 minutes.
For the chicken cutlet, set up 3 different stations—combine all of your ingredients listed under STATION 1, 2, and 3 in three different shallow bowls.
Coat chicken cutlet in STATION 1, 2, and 3—in that order.
Shallow fry your cutlet for about 3 minutes on each side over medium heat.
Once you have your tomato sauce and chicken cutlet ready, assemble your plate by combining spaghetti noodles, tomato sauce, parsley, basil, parmesan cheese, salt, and black pepper.
Top each chicken cutlet with tomato sauce and mozzarella cheese. Broil for a couple of mins or until cheese melts.
