A flavorful ginger-braised chicken dish made with marinated drumsticks or thighs. The chicken is marinated in ginger, garlic, shallots, fish sauce, and spices, then cooked with a caramel sauce and coconut water for a rich and savory meal.
Wash your chicken. Julienne your ginger.
Marinate chicken with julienned ginger, 2 TBSP minced garlic, 2 TBSP minced shallot, 4 TBSP fish sauce, 2 TBSP sugar, 1 TBSP chicken bouillon, and ½ tsp black pepper. Marinate this for 30 mins at room temp.
In a wok, add 4 TBSP sugar and 3 TBSP oil, then turn on heat. Melt your sugar/caramelize sugar until it becomes a dark amber color, then add your marinated chicken. Cook the chicken for ~5 minutes or until all the pink is gone.
Once all the pink is gone, pour in 24 oz of coco rico/coconut soda/coconut water or water. Bring this to a boil. When this boils, reduce heat, cover with a lid and simmer for 30 minutes. Don’t forget to skim during this process.
After 30 minutes, the chicken should be cooked. Taste test the sauce, and if everything is good, crank your heat to high and cook for 5-7 minutes, noting that your sauce will slightly thicken.
Garnish with chopped scallion and Thai chilies (this is optional).
