A flavorful kimchi soup made with dried anchovies, herring, and kimchi. This dish is simmered with various seasonings and garnished with sesame oil and scallions for a delicious meal.
Place fried anchovies and dried herring into a pot of water (4-5 cups). Then add 1 piece of dried kelp as big as your hand.
Bring this to a boil then reduce heat and simmer for 20-30 mins. Remove and discard slime-like texture that appears from the kelp.
After 20-30 mins of simmering, remove everything— stock bag, kelp, and any remaining slime.
Season your broth with 1 tsp salt, 1 TBSP sugar, 2 tsp gochugaru, and 1 TBSP gochujang. Combine well until all seasoning is dissolved.
Add onions, scallion, and kimchi. Combine well then reduce heat and simmer for 10-15 mins.
Taste test your soup and make sure it’s ok. If it is, turn off heat and top with sesame oil and chopped scallion.
