A delightful Korean curry featuring pork belly, carrots, and potatoes, cooked in a rich curry sauce. This dish is a satisfying meal that is best served with rice.
Pan fry your pork belly (no oil needed). Place it onto a paper towel to catch any excess oil. Cut them into bite size and reserve the pork belly fat.
With the leftover pork belly grease, pan fry your potatoes until they have a nice crispy layer. Remove from heat when done & place onto a paper towel to catch any excess oil.
In a pot, heat up some oil & stir fry your carrots for 2 mins. Add 6 cups of water & cook for 6 mins on high heat.
After 6 mins, add your pork belly & potatoes. Mix well.
Slow stir in your curry packet. Your curry will thicken. Cook until your carrots are tender/to your preference.
 Serve with rice.
