This lazy version of galbi jjim is made with inexpensive beef stew meat cooked in a pressure cooker, making a delicious Korean braised short rib dish that the whole family enjoys.
Soak beef in water just until you’re done prepping the rest of your ingredients. Drain ribs and rinse under cold water.
Cut your carrots, radish/potatoes, and mushrooms to preferred size.
Make your marinade: in a blender, add all of your ingredients listed under MARINADE and blend until smooth.
Pour the marinade over your ribs and allow to marinate until you’re done prepping your veggies.
Place beef, marinade, and veggies into your pressure cooker. Cook on high for 12-15 minutes.
Once it's done cooking, switch to sauté mode and cook for 5 minutes.
Serve with Korean purple rice, cauliflower rice, and kimchi.
