A delicious leftover turkey pho made with a turkey carcass, various aromatic spices, charred onions, and ginger. This comforting broth is simmered with seasonings like fish sauce and can be served with optional ginger-infused fish sauce for extra flavor.
Shred off all the meat from your turkey carcass.
Toast spices on a dry skillet until they have some color.
Char onions and ginger in an air fryer at 400°F for 20 minutes, flipping halfway through.
Combine turkey carcass, water, cinnamon sticks, cardamom pods, cloves, fennel seeds, coriander seeds, star anise, yellow onion, ginger, rock sugar, and fish sauce in a large stockpot. Bring the mixture to a boil.
Once boiling, reduce heat and simmer for 30-45 minutes.
After 30-45 minutes, taste the broth and adjust seasoning with salt or chicken bouillon, if desired.
Assemble your bowl with hot broth and enjoy. (Optional: make ginger fish sauce by mixing fish sauce, sugar, coconut soda, white vinegar, and minced garlic together until the sugar dissolves; add ginger to individual portions if desired.)
