Nem Thinh is a delicious Vietnamese dish made with powdered pork and pork skin, ideal for nhậu (beer) food. It's commonly served with spring rolls, lettuce, various mint leaves, and fish sauce, or simply with rice and a drizzle of fish sauce.
Wash 16 oz of pork skin in water. Sprinkle 1/4 tsp salt over and let sit for 5 minutes before rinsing under cold water. Set aside.
Bring a pot of water to boil. Add 1/8 tsp of salt and 1.5 lbs of pork tenderloin. Cook for 10 minutes, then turn off heat, cover, and let sit for 5 minutes. Allow to cool before slicing into matchsticks.
Marinate sliced pork with 3/8 cup of sugar, 3 TBSP of fish sauce, and 1 bulb of minced garlic for 30 minutes in the fridge.
Mix the marinated pork with 8 oz of roasted rice powder and julienned pork skin. Combine well.
Top with cilantro and fried shallots before serving.
