A flavorful dish featuring catfish filets caramelized in oil and sugar, complemented with garlic, fish sauce, and optional dark soy sauce. Perfectly served with rice and soup.
In a pan, combine 2 TBSP oil with 2 TBSP sugar. Caramelize this until it becomes a dark amber color.
Then add your catfish filets and cook both sides till the filet changes color.
Then add water so 1/2 of your fillet is covered along with 2 TBSP minced garlic and 2 TBSP fish sauce. Cover and cook for 10-15 minutes making sure to baste.
After 10-15 mins, taste test and adjust to preference. You will need to add some more sugar. If you have dark soy sauce, then add that as well.
Then crank your heat to high and cook for 5 minutes. Your sauce will start to thicken up.
Top this off with scallion. Serve with rice and some soup.
