Chao Ga is a traditional Vietnamese rice porridge made with chicken, scallions, and aromatics, simmered in a flavorful broth. It’s served with various toppings like cilantro, fried shallots, and chili for a delicious, comforting meal.
In a large pot, add chicken, onion, ginger slices, scallion, and water. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, flipping chicken halfway through.
After 1.5 hours, remove the chicken, allow it to cool, and then shred or chop it.
Remove onion, scallion, ginger slices, etc., from the pot, leaving only the broth.
Measure out 5 cups of chicken broth, and add it along with 1 cup of washed, uncooked rice to a pot. Bring to a boil, reduce heat, and simmer for 45-60 minutes, stirring occasionally.
After 45 minutes, add shredded chicken and diced carrots, combine well, and cook for another 10 minutes or until carrots are cooked.
Taste and adjust seasoning as needed, using fish sauce and chicken bouillon if desired.
Serve hot with your desired toppings like cilantro, scallion, fried shallots, bean sprouts, chili, and lime.
