20 mins prepServes 4
A delicious recipe for Vietnamese Sweet and Sour Pork Ribs (thit chua ngot) featuring tender pork ribs marinated with shallots and black pepper, then cooked in a flavorful concoction of fish sauce, sugar, vinegar, and garlic.
1: In a pot, add your pork and just enough water to cover it. Turn on heat and bring to a boil. Once boiling, turn off heat. Wash and rinse the pork ribs under cold water, then pat dry with a paper towel.
2: Marinate the blanched pork ribs with minced shallots and black pepper.
3: In a skillet, heat some oil and sear your pork ribs. Once seared, remove from heat.
4: In the same skillet, add the concoction (water, fish sauce, sugar, vinegar, garlic) and cook until it starts to thicken.
5: Once the concoction thickens, add the pork and toss well into the sauce. Cook until the pork is cooked through.
6: Garnish with scallion and add Thai chilis if desired.
